Poland Bar Hop Pt1: Dom Whisky Warsaw. Recently established, it’s still finding its crowd. But the selection is extensive. I chose a 1980s Four Roses Italian export. Not good. The bartender agreed, felt bad, and gave me two free pours—an older Old Bardstown and a Willett XCF. Both were better! Na zdrowie! With the exception of the grapefruit and rosemary, the prime ingredients in this cocktail come from the northwest of their region. Hence the Northwestern Sour. The maple syrup pairs well with the Westward and the Bordiga Rosso’s bright earthy sweetness. A recommended riff on the sour template. Cheers! Not the legend itself, but the new Rare Character NDP revival of the famous cult Black Maple Hill label. My money is on Jim Beam’s Knob Creek stocks as the source but that’s pure guessing. Wherever it came from, it’s good! Cheers!
